To make the compote (jam):
Combine the red grapes, sugar, lemon juice, and thyme sprigs in a small pot. Cook over medium heat, stirring occasionally, until the grapes break down and the mixture becomes syrupy, about 10-15 minutes.
Remove the thyme sprigs and allow to cool before serving.
To make the whipped cottage cheese:
Place the cottage cheese in a food processor. Process on high speed in 20 second intervals until the cottage cheese is smooth and creamy.
Scrape down the sides of the bowl as needed to ensure all the cottage cheese is evenly whipped.
Storage:
Store the compote and whipped cottage cheese refrigerated in separate airtight containers for up to 5 days.
Pair with Pinot Noir or Zinfandel.
Yield: 2-4 servings
