In a large skillet over medium-high heat, melt butter. Add beef and cook, breaking up into small crumbles with a wooden spoon as it cooks. Cook for about 8 minutes, until beef is cooked through and begins to brown. Stir in taco seasoning until combined, about 1 minute. Remove from heat.
To serve, open each chip bag and fold edge of bag twice to create a wide opening. Top bags evenly with lettuce, beef mixture, Cheddar, Monterey Jack, a dollop of sour cream, avocado, tomatoes and red onions.
Serve and enjoy.
Serves: 4 servings
Tip: Feel free to substitute ground beef or turkey for ground Mexican chorizo.
