Loaded Sweet Potato Board

Ingredients:

– 6 medium sweet potatoes – 1 cup Real California Sour Cream (or Plain Greek Yogurt) – 1 cup cherry tomatoes, halved – 1 cup grated Real California Pepper Jack Cheese – 1 cup micro greens – 1 cup sliced green onions – 2 cups prepared vegetarian (or meat) chili – 8 tablespoons Real California Butter, softened – 1/4 cup hot honey :Pepper Jack

Directions:

Prep time: 20 minutes

Cook time: 20-25 minutes

Make the sweet potatoes. Scrub the potatoes and prick 5 times with a knife. Place in the microwave and cook for 15 minutes on high power. Flip the sweet potatoes over and cook for 5-10 minutes more, or until the skins are easily pierced with a knife.

While the sweet potatoes are cooking, make the honey butter. Whisk the butter with the hot honey until smooth. Put in a small bowl.

Warm the chili and place in a bowl. Place the sour cream, tomatoes, cheese, and microgreens in small bowls.

Assemble the board. Set the bowl of chili in the middle of a circular board. When the sweet potatoes are done, slice them lengthwise down the middle and arrange around the chili. Arrange the remaining ingredients around the board. Serve immediately.

Yield: serves 6
