Creamy Yogurt Pasta Salad

Ingredients:

– 2 cups pasta, such as penne or fusilli – 1/2 cup Real California plain yogurt – 1/4 cup Real California crumbled feta cheese – 1/4 cup diced cucumber – 1/4 cup cherry tomatoes, halved – Salt and pepper to taste – Fresh herbs, such as parsley or dill, for garnish (optional) :Pasta Salad, Protein

Directions:

Prep time: 15 minutes

Cook time: 15 minutes

In a pot of salted, boiling water, cook pasta to al dente. Drain and rinse under cold water to stop the cooking and cool pasta.

In a large mixing bowl, combine yogurt with a pinch of salt and pepper, mixing well. Add cooled pasta, cheese, cucumber, and tomatoes, tossing until mixture is evenly coated with dressing. Add more salt and pepper to taste.

Transfer mixture to a serving dish and garnish with herbs, if using. Serve immediately or refrigerate for an hour to let the flavors meld.

Serves 4.

Author Note: Enjoy your creamy yogurt pasta salad as a standalone dish or pair it with grilled chicken or fish for a more substantial meal.
