Take out the frozen puff pastry sheets about 30-40 mins before you are ready to use them.
Preheat the oven to 415°F.
1. Line a baking sheet with parchment paper.
2. Slice puff pastry into 4-6 squares/rectangles.
3. Drizzle 2-3 teaspoons of olive oil on the parchment paper equally spaced apart and then spread each into a thin layer. (This is where you will place the broccoli.)
4. Place 3-4 florets of broccoli over each area of olive oil and season to your liking.
5. Top each with 2 oz. of grated Cheddar.
6. Place the cut pieces of pastry over each pile of broccoli and cheese and gently press down the edges to seal the ingredients inside the puff pastry.
7. Brush the top of the puff pastry with egg wash.
8. Optional: Add more cheese to the outside of the puff pastry for a crunch cheesy crust.
9. Bake for about 15 mins or until the puff pastry is golden brown.
10. Allow to cool for a few minutes before flipping over to serve.
